Shower Menu – Classic Southern Trio Salad Plate
Host an elegant but simple baby/bridal shower and serve a classic Southern trio salad plate!
Classics are classic for a reason!
I was reminded just how delightful classic Southern salads can be the other day when my mother and I enjoyed a delightful lunch at a little tea house. We both partook of the classic Southern trio salad plate. You know the one I’m talking about…filled with tasty chicken and egg salads and pimento cheese!
YUM!
My mother pointed out this used to be the “go to” meal for baby and bridal showers, and I thought how perfect that menu sounded for a make ahead luncheon that’s simple and elegant.
You can make everything a day or two before the event and keep it in the refrigerator, so the day of you just have to plate it.
Presentation is key though. Place a leaf of lettuce down on the plate first. Use an ice cream scoop to create perfectly rounded balls on top of the lettuce then frame the salads with fruit and crackers.
If you’ve got vegetarians in the mix, do an optional veggie pasta salad or shredded broccoli kale.
I’ve already shared my momma’s chicken salad recipe here, and below are my recipes for egg salad and pimiento cheese.
Egg Salad Recipe
Serves 6
10 Hard Boiled Eggs
1/2 Cup of Finely Chopped Celery
1/4 Cup of Finely Chopped Sweet Onion
3/4 Cup of Mayo
1 Tsp Cajun Seasoning like Slap Your Mama
To Make:
Boil and peel your eggs and let cool. Then chop them up into small cubes. In a large bowl, mix together the eggs, celery, onion, mayo, and seasoning. Let sit at least 20 minutes in refrigerator before serving.
Pimiento Cheese Recipe
I can not claim any credit for this recipe! It is an old Southern Living recipe, I started using years ago, and to this day I never make it any other way. It’s tried and true, and everyone loves it.
Makes 4 cups
1 1/2 Cups Mayo
4 Oz Jar Diced Pimiento, drained
1 Tsp Worcestershire Sauce
1 Tsp Finely Grated Onion
1/4 Tsp Ground Red Pepper
8 Oz Block Extra-Sharp Cheddar Cheese – we love Cabot
8 Oz Block Sharp Cheddar Cheese
2 Seeded and Minced Jalapeño Peppers
To Make:
Shred cheese in food processor. In a large bowl, mix together the mayo, pimiento, Worcestershire, onion, red pepper, cheeses, and jalapeño. Let sit in refrigerator 20 minutes before serving.
For dessert, opt for a yummy lemon cake!
If you are not a baker like me, head to your local grocery and pick one up. Decorate it with lemon slices and white icing.
