There is nothing more refreshing for sultry summer afternoons than mint and lime except when you add coconut to it! Forget about the plain ole mojito, once you make my version with coconut you'll never go back!
This summer cocktail is easily to stir up and requires just a few ingredients. You can make a whole pitcher and just sip on through the afternoon in a lazy buzz. I do highly recommend lazying poolside with Harry Nilsson's song thrumming along!
Grab a tray, some thick glass tumblers like these La Rochere bee glasses and a tall pitcher. Cut some fresh sprigs of mint and let's get mixing!
Coconut Mojitos Recipe
Ingredients
Makes 4
6 sprigs fresh mint
4 oz fresh lime juice - 4-5 limes
8 oz coconut flavored rum - I'm newly obsessed with Rum Haven
12 oz soda water - you can use plain or La Croix lemon or lime for extra citrus flavor
1 tbsp cream of coconut - get Coco Real's squeeze bottle
To Make Coconut Mojitos
Strip leaves off of 2 stems and muddle in bottom of pitcher. Don't tear or cut as this creates a bitter flavor. Save other sprigs for drink garnish.
Squeeze about 3-4 limes for 4-6 ounces of juice. Pour into pitcher with mint. Slice one lime for garnish.
Add 8 ounces of coconut flavored rum and tablespoon of cream of coconut to pitcher. Stir vigorously with mint and lime. Let sit for 5 - 10 minutes to marry flavors. Fill glasses with ice.
Gently stir in soda water to pitcher. If you want your drinks more fizzy, fill the glasses with the coconut, rum. and lime mixture then top each glass with the soda water. Add mint and lime garnish.
